Mango Oolong Fruit Tea: A Batch Recipe for Tea Shops
Mango fruit tea sells on looks as much as taste: a golden cup with real mango pieces at the bottom. This guide gives tea and boba shops a 24-drink plan for mango oolong fruit tea built on pasteurized frozen mango purée and diced mango, with tea brewing, a per-cup build, holding tips and menu variations.
Why build mango tea on frozen fruit
Fresh mangoes ripen unevenly and take time to peel and cut, so flavor and color change from day to day. Frozen mango purée and IQF diced mango are packed at peak ripeness, so every cup gets the same sweetness and the same bright color all year. See when mango is in season on our harvest calendar.
Batch ingredients for 24 drinks
| Ingredient | For 24 drinks | Per 16 oz cup |
|---|---|---|
| Oolong tea leaves (a light, floral oolong) | 3 oz (85 g) | – |
| Hot water for brewing (195–205°F) | 2½ quarts | – |
| Ice or cold filtered water, to chill the tea | 2½ quarts | – |
| Brewed oolong tea (from above) | About 1¼ gallons | 7 fl oz |
| Pasteurized frozen mango purée, thawed | 7½ cups (60 fl oz) | 2½ fl oz |
| IQF diced mango, thawed | 3 cups | 2 Tbsp |
| Cane sugar syrup (1:1) | 2¼ cups (18 fl oz) | ¾ fl oz |
| Ice | As needed | To fill |
Mango purée is sweeter than passion fruit, so this drink needs less syrup. Treat ¾ fl oz as “regular” sweetness and adjust from there.
How to prep the batch
- Thaw the fruit. Move the mango purée and diced mango from the freezer to the refrigerator the day before. Thaw under refrigeration, not at room temperature.
- Brew the tea. Steep the oolong in 2½ quarts of water at 195–205°F for 5 to 6 minutes, then strain out the leaves.
- Chill fast. Pour the hot tea over 2½ quarts of ice or cold water to cool it quickly and dilute it to drinking strength. Refrigerate until cold.
- Set up the station. Portion the purée, diced mango, syrup and chilled tea into labeled containers at the drink station.
- Build each cup to order. Spoon 2 Tbsp diced mango into a 16 oz cup. In a shaker, combine 2½ fl oz mango purée, ¾ fl oz syrup, 7 fl oz tea and a scoop of ice. Shake for 10 seconds, pour over the diced mango and top with ice.
Taste target: ripe mango up front with a soft floral finish from the oolong. If the tea gets lost, cut the purée to 2 fl oz. If the cup looks pale, add more purée, not syrup.
Holding and food safety
- Use pasteurized mango purée. In the US, fruit purée used in drinks is regulated as juice and must be pasteurized or receive an equivalent kill step. IQF diced mango is not juice, so it is not covered by that rule.
- Keep frozen fruit at 0°F (-18°C) or colder until you thaw it, and do not refreeze thawed fruit.
- Keep thawed purée, diced mango and syrup refrigerated at 41°F (5°C) or below between rushes.
- Brew only as much tea as you expect to sell in a shift. Many tea programs discard brewed iced tea after 6 to 8 hours and never hold it overnight. Follow your local health department’s rules.
- Clean and sanitize tea brewers, shakers and containers at least once a day.
Five menu variations from the same station
- Mango green tea: swap the oolong for jasmine green tea for a lighter, more floral cup.
- Mango slush: blend 3 fl oz purée, ½ fl oz syrup, 3 fl oz tea and a full cup of ice until smooth, then pour over diced mango.
- Mango strawberry: replace one-third of the mango purée with strawberry purée for a sunset-colored layered cup.
- Mango pineapple: blend in a little pineapple for a sharper, more tropical drink.
- Mango passion: add 1 fl oz of passion fruit purée with seeds. It pairs with our passion fruit green tea recipe, so both drinks can share one station.

Frequently asked questions
What tea works best with mango?
A light, floral oolong or a jasmine green tea. Both let the mango lead. Strong black teas can cover the fruit, so use less purée if you choose one.
Should I use diced mango or chunks for the cup?
Diced mango is easier to drink through a wide boba straw. Larger chunks look good on top of slushies and bowls but can block a straw.
Can I make mango tea without added sugar?
Yes. Ripe mango purée is naturally sweet, and many shops offer a no-syrup option. Taste the purée from each lot, since sweetness varies with the crop.
How long does thawed mango last?
Keep it refrigerated and follow your own date-marking rules. Do not refreeze it.
