Black, White & Red Pepper FAQs

What pepper products do you supply?

Black pepper (whole, cracked, coarse and fine ground), white pepper (whole and ground), crushed red pepper and ground red pepper. Custom grinds, pack formats and private label are available on request.

What is the difference between black and white pepper?

Black pepper is the whole dried peppercorn, with a bold, sharp flavor. White pepper has the outer skin removed, so it has a milder, earthier flavor and no dark specks, which makes it the choice for white sauces, soups and dressings.

Which black pepper grind should I use?

Use cracked or coarse grind for rubs, steaks and sausages where you want visible pepper. Use fine grind for sauces, soups, dressings and seasoning blends where pepper should disappear into the product. Tell us your current mesh size and we'll match it.

How is the heat of red pepper measured?

The heat of red pepper is measured in Scoville heat units (SHU). The heat level is listed on the spec sheet, so you can keep the heat in your products consistent.

What specifications can you provide for pepper?

Our spec sheets cover particle size, moisture, heat level for red pepper and microbiological limits. Product-specific COAs, allergen statements and facility audit documentation are available on request.

How should bulk pepper be stored?

Store pepper in sealed packaging in a cool, dry place, away from heat, light and humidity. Reseal opened bags right away to protect flavor, color and flow, and rotate stock first in, first out.

Where do you ship black, white and red pepper?

We ship to all 50 states, to manufacturing plants, co-packers and distribution centers.
