Passion Fruit Agua Fresca: A Batch Recipe for 24 Drinks
Agua fresca is one of the easiest drinks to add to a café, taquería, juice bar or catering menu: bright, made in batches and served straight from a beverage dispenser. This guide gives foodservice operators a 24-serving formula for a passion fruit and lime agua fresca, built on pasteurized frozen fruit purées, plus prep, holding and menu variations.
Why make agua fresca with frozen purée
Fresh passion fruit is mostly shell. Cutting, scooping and straining enough fruit for a dispenser of agua fresca takes time and leaves a lot of waste. Frozen passion fruit purée is only the tart, aromatic fruit, ready to measure and pour, so every batch tastes the same. Frozen lime purée does the same job for the citrus, with no squeezing on a busy line. Because the fruit is packed at peak and frozen, you can run the drink all year. Batch ingredients for 24 drinks
| Ingredient | For 24 drinks | Notes |
|---|---|---|
| Pasteurized frozen passion fruit purée (seedless), thawed | 6 cups (48 fl oz) | Thaw in the refrigerator overnight |
| Pasteurized frozen lime purée, thawed | 1½ cups (12 fl oz) | Adjust to taste |
| Turbinado sugar | 3 cups | Made into syrup (below) |
| Hot water, for syrup | 3 cups | |
| Cold filtered water | 1½ gallons (192 fl oz) | |
| Fine salt (optional) | ½ tsp | Rounds out the tartness |
To serve
- Ice, to fill each cup
- Frozen passion fruit purée with seeds, about 1 Tbsp per cup as a garnish float (1½ cups for the batch)
- IQF lime pieces or fresh mint, for garnish (optional)
How to make the batch
- Thaw the purées. Move the passion fruit and lime purées from the freezer to the refrigerator the day before. Thaw under refrigeration, not at room temperature.
- Make the turbinado syrup. Stir 3 cups turbinado sugar into 3 cups hot water until fully dissolved. Cool before using. Turbinado gives the drink a light caramel note and a warmer color than white sugar.
- Combine. In a clean food-safe container, whisk the passion fruit purée, lime purée, cooled syrup, salt and cold water until evenly mixed.
- Taste and adjust. Fruit varies from lot to lot. Add a little more syrup for sweetness or a little more lime purée for tartness, and write the final amounts on your recipe card so every shift makes it the same way.
- Chill and serve. Chill to 41°F (5°C) or below, transfer to the dispenser and stir before serving. Pour 12 fl oz over ice in a 16 oz cup and spoon about 1 Tbsp of passion fruit purée with seeds on top.
Texture target: light and refreshing, not syrupy. Agua fresca should be thinner than juice. If it tastes heavy, add cold water a cup at a time.
Holding and food safety
- Use pasteurized purée. In the US, fruit purée used in drinks is regulated as juice and must be pasteurized or receive an equivalent kill step.
- Keep frozen purées at 0°F (-18°C) or colder until you thaw them, and do not refreeze thawed purée.
- Hold the finished batch at 41°F (5°C) or below, and follow your own date-marking and holding rules.
- Stir the dispenser regularly. Fruit purée settles to the bottom over time.
- Clean and sanitize dispensers between batches.
Five menu variations from the same base
- Mango passion: replace one-third of the passion fruit purée with mango purée for a sweeter, rounder drink.
- Pineapple passion: blend in pineapple for a tropical punch-style agua fresca.
- Pink pitaya: add a few spoonfuls of dragon fruit purée for a bright pink color.
- Sparkling: cut the still water by half and top each cup with chilled sparkling water.
- Granita: freeze the base in shallow pans and scrape every 30 minutes for a frozen dessert.

Frequently asked questions
What is agua fresca?
Agua fresca is a light, non-carbonated drink made by blending fruit with water and a little sugar. It is thinner and less sweet than juice and is usually served over ice from a large dispenser.
Should I use seedless or with-seeds passion fruit purée?
Use seedless purée for the drink itself, so it pours smoothly through dispensers. Purée with seeds works best as a garnish on top, where the crunchy black seeds are part of the look.
Can I make the batch ahead?
Yes. Mix the batch, keep it at 41°F (5°C) or below and stir before serving. Follow your own holding rules for how long to keep it.
Can I use a different sugar?
Yes. Coconut sugar gives a deeper caramel flavor, and white sugar gives a cleaner, brighter taste. Make the syrup the same way.
