We supply both pasteurized and unpasteurized frozen fruit purées. Unpasteurized purée is meant for products that get their own kill step in your process, such as baking or mix pasteurization. For ribbons, variegates, toppings and anything added after your kill step, choose pasteurized purée. IQF fruit pieces are frozen raw fruit and do not go through a kill step, so plan for them in your food safety program. Spec sheets and COAs show the treatment for every product.
