Cuñapé is a traditional Bolivian cheese bread: small, round rolls traditionally made with cassava (yuca) starch and cheese. They bake up crisp outside with a soft, chewy, cheesy center, similar to Brazilian pão de queijo.
Bake them straight from frozen on a lined tray, and don't thaw them first. Follow the directions on the case for oven temperature and time, and bake until puffed and lightly golden.
They are close cousins. Both are cheese breads made with cassava starch. Cuñapé is the Bolivian version, and pão de queijo is the Brazilian version, with small differences in cheese and texture.
Cuñapé is traditionally eaten at breakfast or as an afternoon snack with coffee or tea, and it works well as a bakery case item, café snack, side for soups or catering bite.
